The Subaru Salad Recipe

If the buzz about the “Jennifer Aniston salad” has you craving all kinds of salads lately, look no further: Our partner Natasha Fischer (AKA @TraderJoesList) posted a recipe for her Subaru Salad that we think you’ll love. 

In an Instagram Reel, Fischer says she tends to eat much healthier when she cooks at home—and this is one of her all-time favorite salads to make during the summer. It’s packed with fresh produce, topped with an easy homemade dressing, and perfect for a quick but satisfying summer meal. As for how the salad got its name: “It’s called the Subaru Salad because at the time of making it there was this Subaru commercial with the tagline ‘everyone loves a Subaru,'” says Natasha. “We named it the Subaru Salad because everyone that tries this salad loves it.”

Ingredients:

Salad

  • One bag of shredded cabbage
  • 1 ½ c. chopped cilantro
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 15 sliced cherry tomatoes
  • 1 finely chopped jalapeño
  • 3 chopped sweet peppers
  • 1 c. sliced cucumber
  • 3 sliced celery stalks
  • 1 c. chopped red onion

Dressing

  • 2 avocados (skin removed)
  • The juice of 2 limes
  • 2 to 3 tbsp. olive oil 
  • A dash of salt

Directions:

Add salad ingredients to a bowl. Then, put dressing ingredients into a blender, and blend until it gets to a thin consistency. Transfer the dressing to the top of your salad and mix it all together.
